After the first fermentation, the Champagne-to-be will have an ABV of about 9%, but the second fermentation pushes it up to 12%. Winemakers take these regulations very seriously, which is why you’ll often see “sparkling wine” on the label of a non-alcoholic wine that looks a whole lot like pink Champagne.
