Riviera Rosé: A Non-Alcoholic Twist on the Rossini

Armani took the concept of the Rossini and gave it a Provençal twist. When he began his collaboration with BEAU VIVA, he set out to create a series of mocktails that celebrate the spirit of the South of France while embracing the growing alcohol-free movement. The result was a collection focused on the summer in Provence, from sun-drench mornings to afternoons in the garden to sensual and romantic evenings.

To make the Riviera Rosé, first muddle together wild fennel and strawberries, creating a balance of these flavors. Choose the balance that works best for you. If you’re looking for something on the sweeter side, go for more strawberries. If you’re looking for something with a little more spice and the rich depth of aniseed, go for more wild fennel. Add your mixture to a champagne flute.
