Then, the second fermentation, which utilizes a mixture of sugar and yeast called the liqueur de tirage, makes the ABV jump to 12%.
If a wine is made that does not follow these strict instructions, it can’t be sold to the public as Champagne. That’s why you’ll often see bottles on store shelves that say “non-alcoholic sparkling wine” even when the wine sure looks a lot like Champagne.
Throughout this article, we’ll refer to these bottles as “non-alcoholic Champagne substitute,” but you’re most likely to see these and other wines like them labeled as “non-alcoholic sparkling wine” on your store shelves.
